Our Corallian Classic Cuvée NV, with base vintage 2020 and 21% reserve wine, is a blend of 88% Chardonnay, 6% Pinot Noir, 6% Pinot Meunier

A Chardonnay dominant cuvée which is citrus led, with mineral & saline notes, suited to all occasions; particularly in the spring & summer months.  The Corallian drinks equally well on its own or particularly with fish dishes. Perfect now or age for up to 5 years.

    Very powerful aroma and I can really see the Selosse connection (Grimshaw is a disciple). Dry finish. This is less a standard-issue sparkling wine and more a solid, real wine which fizzes. Very young but not aggressively acid.

Background:

All fruit for this wine was sourced from our single site in rural Dorset. The Crawthorne vineyard consists of 12 hectares planted to Chardonnay, Pinot Noir and Pinot Meunier and is located on a sheltered south facing slope at 80-100 metres above sea level. The soil consists of a shallow clay loam, containing flint, over deep Cretaceous chalk.

Vinification:

The grapes for the base vintage were picked in October 2020 and gently pressed in whole bunches. Press fractions were carefully separated and left to naturally settle for 24 hours. Primary fermentation, with indigenous yeasts, took place in a combination of stainless-steel tanks and used oak barrels, followed by complete malolactic fermentation.  Following 7 months of élevage, the final blend, complete with reserve wine from our 4000 L concrete tanks, was bottled and left to age on lees for a minimum of 14 months. At disgorgement the wine received 1.5 g/L dosage and was aged for a minimum of 3 months under cork.

Tasting Note:

This wine reflects the welcome warmth of the base year’s turbulent summer while expressing the character we look for in Corallian – focus, salinity and elegance. The nose has wild notes of gorse and sea buckthorn with apricot tart and candied orange, while the ripe palate is full bodied, with hints of alphonso mango, perfumed quince, cedar and lemon peel.
