Very powerful aroma and I can really see the Selosse connection (Grimshaw is a disciple). Dry finish. This is less a standard-issue sparkling wine and more a solid, real wine which fizzes. Very young but not aggressively acid.

Citrus, bruised apple, gooseberry, lemon, lime and green apple aromas and flavours. There's nice minerality too, making this drink lively and fresh.

Aldehydic, bruised apple style, with subtle characters of creme fraiche and nutskin. Fine texture, the palate exploding with energy. Dry with a fine rolling bubble; beautifully textured. Complex.

A somewhat different style of English sparkling wine with lovely aromas of candy citrus, pear juice and lemon verbena, complemented by orchard fruits. Peaches, kiwi and ripe fruits also feature. There are some interesting touches of oxidative notes that beautifully support the fruit and floral flavours.

The nose is vivid with both fresh Granny Smith and Golden Delicious apple notes, spelling freshness and ripeness at the same time. The fresh apple fruitiness is as vivid on the palate while the mousse, even after just 20 months of ageing, is wonderfully smooth. The wine's inherent freshness is countered by a mellow and rich texture and makes for a most vibrant and individual English Sparkling Wine.

This is a delicious chardonnay-dominant cuvée with rich brioche nose, pearskin nose, taut acidity, minerally backbone, and such richness and intensity for the price.

88% Chardonnay, 6% Pinot Noir, 6% Pinot Meunier.
All fruit for this wine was sourced from our single site in rural Dorset. The Crawthorne vineyard consists of 12 hectares planted to Chardonnay, Pinot Noir and Pinot Meunier and is located on a sheltered south facing slope at 80-100 metres above sea level. The soil consists of a shallow clay loam, containing flint, over deep Cretaceous chalk.
The grapes for the base vintage were picked in October 2020 and gently pressed in whole bunches. Press fractions were carefully separated and left to naturally settle for 24 hours. Primary fermentation, with indigenous yeasts, took place in a combination of stainless-steel tanks and used oak barrels, followed by complete malolactic fermentation. Following 7 months of élevage, the final blend, complete with reserve wine from our 4000 L concrete tanks, was bottled and left to age on lees for a minimum of 14 months. At disgorgement the wine received 1.5 g/L dosage and was aged for a minimum of 3 months under cork.
This wine reflects the welcome warmth of the base year’s turbulent summer while expressing the character we look for in Corallian – focus, salinity and elegance. The nose has wild notes of gorse and sea buckthorn with apricot tart and candied orange, while the ripe palate is full bodied, with hints of alphonso mango, perfumed quince, cedar and lemon peel.
Total Acidity: 7.7 g/L
Dosage: 1.5 g/L
