Our Sparkling Wines
Our sparkling wines are made solely from the classical Champagne varieties Chardonnay, Pinot noir and Pinot meunier. Every bunch is carefully hand-picked and processed using a mixture of old and new techniques in our on-site winery. We adopt a low intervention approach and as such all our wines are vegan.
We only use the Traditional Method, utilising a second, in bottle fermentation, to produce the sparkle. Each bottle is then aged on yeast lees for a minimum of 18 months before being disgorged and aged further under cork. Only when we are 100% satisfied with the wine will we release it for sale.

cut grass, oyster shell and baked apple
Corallian Classic Cuvée NV
A blend of 62% Chardonnay, 29% Pinot Noir and 9% Pinot Meunier from 2017 with 10% reserve wine. Aromas of cut grass, oyster shell and baked apple. The palate has a fine mousse with a saline focus. Stewed apple flavours with an integrated citrus acidity and a long finish.
Orchard and stone fruit flavours
Culver Classic Cuvée NV
A blend of 66% Pinot Noir, 24% Pinot Meunier and 10% Chardonnay from 2017 with 6% reserve wine. Aromas of red apple, plum, strawberry yoghurt and toasted brown bread. The palate has a fine mousse with orchard and stone fruit flavours, zesty acidity and a nice salinity with a long finish.
Our fruit driven Rosé NV, with base vintage 2016, is a blend of 44% Chardonnay, 31% Pinot Noir and 25% Pinot Meunier and was aged for 30 months on yeast lees. Aromas of strawberry leaf, rhubarb and yoghurt. The palate has a fine mousse with notes of rhubarb crumble, pink lady apples and an intergrated citrus acidity.
Golden Hues and Fine Bubbles
Blanc de Blancs Reserve 2015
100% Barrel-aged, estate grown, Chardonnay. Aged on lees for 18 months, followed by min 6 months under cork. An intense nose of toasted brown bread, spice and honey gives way to a palate of crisp green apple and distinctive saline and mineral characteristics.

Delicate fruit aromas
Pinot Meunier 2017
A rare example of a single varietal 100% Pinot Meunier from our Home Field Vineyard which juxtaposes a seriously concentrated palate with delicate fruit aromas. The palate has a fine mousse with stone fruit and sherbet flavours. Both elegant and robust, this wine shows great depth and broadness with a very long finish.
Red apple and brioche
Classic Cuvée 2014 Magnum
A blend of 50% Chardonnay, 25% Pinot noir and 25% Pinot meunier. A golden colour with a stream of fine bubbles. Aromas of red apple and brioche giving way to a palate with fantastic weight and flavours reminiscent of honeydew melon and poached pear.
Blanc de Blancs 2011 Magnum
100% Chardonnay and six years lees ageing give this outstanding wine citrus fruit, freshly baked bread and toasted nut aromas with a complex palate displaying a honeyed richness. All of these components are complimented by a fresh acidity that leads to a long mouth-watering finish.
