Our Sparkling Wines
Our sparkling wines are made solely from the classical Champagne varieties Chardonnay, Pinot Noir and Pinot Meunier. Every bunch is carefully hand-picked and processed using a mixture of old and new techniques in our on-site winery. We adopt a low intervention approach and don’t fine or filter our wines, as such all our wines are vegan.
We only use the Traditional Method, utilising a second, in bottle fermentation, to produce the sparkle. Each bottle is then aged on yeast lees for a minimum of 18 months before being disgorged and aged further under cork. Only when we are 100% satisfied with the wine will we release it for sale.

Corallian Classic Cuvée NV
A blend of 75% Chardonnay, 15% Pinot Noir and 10% Pinot Meunier from 2018 with 17% reserve wine. Aromas of gala apple, pear, cut grass and hay. The palate has a fine mousse with orchard fruit and lemon citrus notes. A welcome touch of salinity and freshly baked brown bread, along with a butteriness add more dimensions to this wine.
Orchard fruit and floral flavours
Culver Classic Cuvée NV
A blend of 55% Pinot Noir, 20% Pinot Meunier, 25% Chardonnay and 11% reserve wine. Aromas of pink lady apple, raspberry jam, croissants & floral notes. The palate has a fine mousse with orchard and stone fruit flavours, zesty acidity and a nice salinity with a long finish.
Our complex Rosé NV is a blend of 46% Pinot Noir, 18% Pinot Meunier, 36% Chardonnay, and is made from 85% base wine from 2018 and 15% reserve wine. The wine offers aromas aplenty of cherry bakewell, pink lady apple skin, raspberry yoghurt & wild strawberries. The palate reflects this fresh red berry profile, but it is also more serious & has great depth. Cherry yoghurt, young wild strawberry & raspberry coulée bring the fruit profile to the forefront, whilst a more savoury & saline note rounds off the wine.
Apple Blossom & Honeysuckle
Blanc de Blancs 2017
The nose is complex with ripe gala apple and poached pear. Some floral
notes of apple blossom and honey suckle. A seriousness here too, with wet beach pebbles and toasted granary bread. A well-integrated orchard fruit acidity. Confected apple, some creaminess ad great texture. A lovely salinity and citrus balances well. Some light brioche and almond notes too.

Pinot Meunier 2018
A rare example of a single varietal 100% Pinot Meunier from our Home Field Vineyard, aged 100% in old french oak barrels.
The nose is intense and pronounced. Caramelised peach, fresh cream and wet beach pebbles come initially. These aromas are backed up by a delicate wave of floral notes, such as apple and orange blossoms and honeysuckle.
The palate is rich and complex with a profile of white peach, pear tarte tatin and salted almonds.
Delicate tannin from the oak adds great texture and there is a wonderfully refreshing grapefruit acidity.
Red apple and brioche
Classic Cuvée 2014 Magnum
A blend of 50% Chardonnay, 25% Pinot noir and 25% Pinot meunier. A golden colour with a stream of fine bubbles. Aromas of red apple and brioche giving way to a palate with fantastic weight and flavours reminiscent of honeydew melon and poached pear.
Blanc de Blancs 2011 Magnum
100% Chardonnay from Langham’s first vintage, and six years lees ageing give this outstanding wine citrus fruit, freshly baked bread and toasted nut aromas. There is a complex palate displaying a honeyed richness. All of these components are complimented by a fresh acidity that leads to a long mouth-watering finish.
