Our Sparkling Wines

Our sparkling wines are made solely from the classic Champagne varieties Chardonnay, Pinot Noir and Pinot Meunier. Every bunch is carefully hand-picked and processed using a mixture of old and new techniques in our on-site winery. We adopt a low intervention approach and don’t fine or filter our wines – as such all our wines are vegan and vegetarian friendly.

We only use the ‘Traditional Method’, utilising a second, in bottle fermentation, to produce the sparkle. Each bottle is then aged on yeast lees for a minimum of 14 months before being disgorged and aged further under cork. Only when we are 100% satisfied with the wine will we release it for sale.

    Corallian Classic Cuvée NV

    Our chardonnay-dominant blend. Saline, nutty and toasty, yet rich with fruit aromas of apple, lemon and quince. Laser-focussed on the palate with electric acidity.

    Culver Classic Cuvée NV

    Our pinot-dominant blend. Broad and full bodied with aromas of black cherry, pepper and apple blossom.

    Rosé NV

    Our rose blend focuses on the two pinot varieties, noir and meunier. Made in a mature, complex style – less floral, more structured. Aromas of raspberry and brown butter lead to a palate of mandarin, greek yoghurt and baked stone fruit.

    Blanc de Blancs NV

    Energetic, concentrated Blanc de Blancs. On the nose, a tense balance of orchard fruit and minerality. Delicate yet weighty in texture finishing with a trademark saline nuttiness.

    Caramelised stone fruit, black pepper

    Pinot Noir 2019

    A truly individual wine. Ten barrels of pinot noir from the 2019 vintage demanded to be bottled as a special release. Powerful on the nose with notes of forest floor and red cherry more typical of a red pinot than sparkling. Oak fermentation and ageing lend the wine spice and structure on the palate.

    Red apple and brioche

    Classic Cuvée 2014 Magnum

    A blend of 50% Chardonnay, 25% Pinot Noir and 25% Pinot Meunier. A golden colour with a stream of fine bubbles. Aromas of red apple and brioche giving way to a palate with fantastic weight and flavours reminiscent of honeydew melon and poached pear.

    Limited Release

    Blanc de Blancs 2011 Magnum

    100% Chardonnay from Langham’s first vintage, and six years lees ageing give this outstanding wine citrus fruit, freshly baked bread and toasted nut aromas.  There is a complex palate displaying a honeyed richness. All of these components are complimented by a fresh acidity that leads to a long mouth-watering finish.
