    Exquisite sparkler, from Langham's own vineyard estate deep in Thomas Hardy country near Dorchester. The latest release is based on the 2019 vintage, 14 months spent on lees. Bone-dry, but not sour in the slightest, it delivers light baked apple, fresh apricot and toasty notes and has the gentle, tiny but busy mousse at which this winery excels. Delicious with seafood, especially crab.

Background:

All fruit for this wine was sourced from our single site in rural Dorset. The Crawthorne vineyard consists of 12 hectares planted to Chardonnay, Pinot Noir and Pinot Meunier and is located on a sheltered south facing slope at 80-100 metres above sea level. The soil consists of a shallow clay loam, containing flint, over deep Cretaceous chalk.

Vinification:

The grapes for the base vintage were picked in October 2020and gently pressed in whole bunches. Press fractions were carefully separated and left to naturally settle for 24 hours. Primary fermentation, with indigenous yeasts, took place in a combination of stainless-steel tanks and used oak barrels, followed by complete malolactic fermentation.  Following 7 months of élevage, the final blend, complete with reserve wine from our 4000 L concrete tanks, was bottled and left to age on lees for a minimum of 14 months. At disgorgement the wine received 2 g/L dosage and was aged for a minimum of 3 months under cork.

Tasting Note:

We aim for Culver, our pinot-dominant Classic Cuvee, to be more rich and broad in character than Corallian, its chardonnay-dominant counterpart. This difference is highlighted in the warm 2020 vintage base wines, with bright red cherry, cranberry and apple blossom on the nose, and black pepper and cola on the palate.
